Carrots are a winter crop here

Carrots want cool soil. In Sindh that means sowing from around September to November and lifting from December through March, and that window is when they are sweetest, cheapest and most plentiful. A carrot in June has either been in cold storage or has come from somewhere considerably cooler, and it costs accordingly.

Cool nights are what put the sugar in. The same variety grown into the heat goes woody at the core and loses the sweetness, which is why local winter carrots and out-of-season ones taste so different.

Keeping them crisp

Twist or cut the tops off before storing. Leaves left on keep drawing moisture out of the root and the carrot goes limp within days — this single step is most of the difference between carrots that last a fortnight and carrots that last three days.

Then keep them in the fridge in a bag or a sealed box. A carrot that has gone slightly bendy is not spoiled, only dehydrated; an hour in cold water brings much of the crispness back.
