If you make roti regularly, you notice when a new bag of atta behaves differently. One flour needs more water; another makes a smoother dough. Wheat variety, how finely it is ground and how much bran remains all play a part.

What to ask about chakki atta

Chakki atta is associated with stone milling, but the name alone does not tell you everything in the bag. Ask whether the flour is whole wheat, when it was milled and whether anything has been blended into it. Those are more useful questions than assuming every stone mill or roller mill produces the same result.

Whole-wheat flour contains the bran, germ and endosperm of the grain. The bran affects texture and water absorption, while the germ contains oils that influence how well the flour keeps. Milling speed and equipment vary, so a chakki label on its own is not a guarantee of temperature, nutrition or shelf life.

Making roti and storing the flour

Our atta is milled from our wheat crop in small batches. Start with your usual roti recipe, then add water gradually until the dough feels workable. Let it rest before rolling. A little adjustment is normal when you change flour; it does not mean you have done anything wrong.

Buy an amount your household can use within the storage period on the pack. Keep the bag sealed, dry and away from heat, and follow its storage instructions. In a hot kitchen, ask about refrigerated storage rather than relying on a cupboard-life estimate that may not suit your home.
