What we don't send to Islamabad: Fresh liquid milk and leafy vegetables

The drive alone is longer than raw milk's honest shelf life. Rather than pasteurise, homogenise and stabilise it into something that survives the trip — which is exactly what the packaged brands do — we keep liquid milk inside Sindh and send the ghee, cream and cheddar instead.

A Sindh farm's pantry range, in the capital

Raw honey from hives kept on our own flowering fields, ghee clarified from our own butter in weekly batches, and atta stone-ground from wheat we grew ourselves. None of these three has an equivalent on a supermarket shelf, because all three are defined by what was left in rather than what was added. Our atta still has the wheat germ in it, which is why it has a smell and a six-to-eight-week shelf life instead of a year.

Chilled fish to Islamabad and Rawalpindi

Rohu and thaila go by overnight chilled courier on netting days, cleaned and cut on the farm and packed with gel ice. We run these on a schedule rather than on demand, because a cold parcel that misses a connection is a wasted fish and a lost customer.
