Crystallisation is the signal people misread

Crystallisation is a normal physical change in honey, and its speed varies with the sugars present, floral source and storage temperature. Some genuine honeys remain liquid much longer than others.

Neither a clear jar nor a crystallised jar proves purity. If you prefer a runnier texture, gently warm a suitable closed container in warm water and follow the supplier’s handling guidance.

What a price can and cannot tell you

An expensive jar can still be mislabelled, and a lower-priced jar is not automatically adulterated. Compare the stated origin, floral claim, batch details and processing before judging value.

A single-floral honey such as sidr may command a premium, but the name should be supported by traceable information. A seasonal harvest can also be stored and sold later; year-round availability is not evidence of fraud.
