Raw honey crystallises — that is the point

Real raw honey granulates over time, faster in cool weather. Most people read that as spoilage; it is actually one of the better signs you have the real thing. Honey that stays permanently clear and runny has usually been heated hard or cut with syrup. Stand the jar in warm water and it loosens again.

Cold-extracted, coarsely strained

Heating honey to make it pour and filter easily destroys its enzymes and aroma. We spin the frames cold and strain only enough to take out wax. Some pollen stays in, which is why the colour and flavour shift between batches depending on what was flowering.

The hives work for the farm too

The bees are not a side business — they pollinate our orchards and vegetable beds, and their honey carries the season those fields were in. A jar taken during mustard flowering tastes nothing like one taken after the citrus. We label batches rather than blending everything into one uniform product.
