What ageing actually does to cheddar
A young cheese is mild because nothing has happened to it yet. Over months in a cool store, enzymes break the proteins and fats down into smaller compounds, and those compounds are the flavour — the savoury depth, the slight crystalline crunch in a well-aged wheel, the sharpness at the back of the mouth. None of it can be added. It has to be waited for.
That wait is also the cost. A wheel occupies space and earns nothing until it is cut, and it loses weight to evaporation the entire time, so a kilo of aged cheddar started as rather more than a kilo of curd. This is the whole reason aged cheese costs what it does, and the reason a cheese that tastes sharp on the day it is made has been made sharp by some other means.
Why this is not the same product as a cheese slice
Processed cheese starts from cheese and adds emulsifying salts, water and often milk solids or vegetable fat. The result melts smoothly and evenly, keeps for a long time, and costs a fraction as much to make. It is a genuinely useful product and it is sold honestly — the ingredient list says exactly what it is.
It is simply not the same thing. A slice is engineered for consistency and shelf life; this is a cheese that varies between batches because the milk varies between seasons. If you want something that melts identically every time on a burger, buy the slice and keep your money. If you want a cheese with a flavour of its own, that variation is what you are buying.
Serving and storing it
Take it out of the fridge half an hour before you eat it. Cold mutes the aromatics almost completely, which is why cheese eaten straight from the fridge tastes mostly of salt and fat. At room temperature the flavour opens up considerably.
Wrap it in parchment and then loosely in foil rather than tightly in plastic. Cheese needs to breathe a little; sealed in plastic it sweats and the surface goes slippery. A little surface mould on a hard cheese is not a disaster — cut a centimetre off and the rest is fine. Grated cheese, though, should be used quickly, because you have just multiplied its surface area many times over.
It melts well but not instantly: aged cheddar is drier than young cheese, so give it a moment longer and slightly lower heat, or it can go grainy.
What cheese costs in Pakistan
Cheese here is really four markets — imported block, local block, processed slices and frozen shredded mozzarella — and they are priced on completely different logic. Imported cheese carries the exchange rate; local cheese tracks the milk price; slices and shredded carry the cost of the processing and the packing.
