What farm milk is, and what it is not

This is whole milk from our own herd, chilled and sent out the same day. It is not standardised to a fixed fat percentage, not homogenised, and not heat-treated for shelf life, which means it will throw a cream layer in the fridge and will not keep for weeks.

Packaged UHT milk is solving a different problem and solving it well: standardised, homogenised, heat-treated so it reaches a shop in Quetta as reliably as one in Karachi. We cannot match that and will not pretend to. What it cannot do is be milk that was in an animal yesterday, because the processing that buys the shelf life is exactly what takes that away.

How to check what you are buying anywhere

A cream layer, foam or fat ring cannot establish whether milk has been diluted or reconstituted. Homogenisation and fat content affect those observations. Ask for traceable batch information and appropriate testing.

This matters because loose milk in Pakistan typically passes through three or four hands between the farm and the shop, and dilution is the easiest margin available at each step. Buying direct removes those steps, which is most of what you are paying for.

Handling it

Keep it refrigerated and use it within a couple of days. Boil it if you intend to keep it a little longer — that is standard practice here for good reason, and it costs you some of the fresh flavour in exchange for the time.
