A short season, and no pretending otherwise

Strawberries in Sindh have a narrow late-winter window, and outside it we do not sell them. A strawberry is picked ripe because it does not ripen further after picking — unlike a mango, there is no counter-ripening to do — so fruit that travels far arrives either under-ripe forever or already going.

That is the whole reason we sell them only in season and only nearby. It is also why the price falls sharply at the peak of the window and rises at both ends of it.

Handling them

Do not wash them until you are about to eat them. Strawberries absorb water readily and washed fruit goes soft within hours. Keep them in the fridge in a single layer if you can, and take out any that have started to go — one soft berry spoils the ones touching it quickly.

Out of the fridge for twenty minutes before eating makes a surprising difference to the aroma, in the same way it does for cheese.
